This dish was inspired by a Cantonese minced squab dish, but the idea works just as well with vegetable-based ingredients.   1. Separate scallion into green and white parts and mince them both..
  2. In a large pan, medium-high heat sauté garlic, ginger and white part of scallions until you get the aroma..
  3. Add ground pork until it changes the color, 3 minutes..
  4. Add chili paste with fermented soy bean(豆板醤).
  5. Add all the ingredients of ☆ into the pan and cook until it boils..
  6. Add tofu and cook it until it boils again for 3 minutes to give the tofu flavor.
  7. Turn the heat down to low and add ● mixture of potato starch and mix it very well. (The sauce will get thicker).
  8. Turn the heat up and drizzle sesame oil and green scallions, heat for one minute..

Adding the cornflour to the sauce. PAN FRY THE TOFU Preheat a large pan or skillet with cooking oil over medium heat. I don't make this dish spicy because of my kids. Though they can tolerate a bit of heat, but I didn't make it spicy. Chicken or pork are the typical meat of choice, though pork is definitely more traditional.
