- It's 1 tbsp of oil.
- You need 1 of onion, sliced.
- It's 1 clove of garlic, finely chopped.
- You need 400 g of tin chopped tomatoes.
- It's 4 of leeks, trimmed and sliced.
- You need 25 g of Vitalite Sunflower Spread / safe 'butter'.
- It's 2 tbsp of water.
- You need 4 of smoked haddock fillets.
- It's 2 tbsp of finely chopped parsley.

- Fry the onion in the oil over a medium heat until softened and translucent. Add the garlic and fry a further minute.
- Add the tin of tomatoes and simmer for 20 mins until the liquid has evaporated. Add salt & pepper to taste.
- Meanwhile sauté the leeks in the butter in a large covered frying pan for 10 minutes on low until softened.
- Add the water and then top with the haddock fillets, seasoned with black pepper.
- Cover and steam for 10 minutes or until the fish is opaque.
- Serve the fish on a bed of leeks topped with the tomato sauce and some new potatoes. Garnish with the chopped parsley.
